“Christmas “ customs

“Christmas in our area” Christmas is a great religious holiday and takes place on the 25 December every year. On these days we primp the Christmas tree. In our area we used to celebrate this feast with our family. Furthermore,we usually eat this day in our grandparent’s houses turkey and bubari. These days, we also make various of sweets like melomakarona, kourabiedes and baklavou.

“Recipe of turkey” Ingredients: 6-7 kg. turkey 2 lemons cut in two 50 gr. butter 700 gr. mixed vegetables - carrots, peas, potatoes, corn parsley leaves - bay leaves Stuffing: 50 gr. oil 500 gr. livers of birds 225 gr. chopped pancetta 2 onions, chopped 2 chopped finokia 25 gr. butter leaf thyme - parsley - Laurel 300 gr. fresh white bread crumbs Zest 2 lemons 2 eggs 125 gr. toast crushed salt and pepper flour How we do it : Preheat the oven to 200 degrees, wash and dry the turkey. Put the lemons, maiantano and bay leaf in the abdomen and close the opening with toothpicks, fill with 1/3 of the filling the opening and closing of the throat well with toothpicks, join the legs with string and tie the tail. Turn to the back wings and join the back, add the vegetables to the pan and into the turkey. Brush well with butter, cover the entire turkey with a large hard buttered foil well clinching edges of the pan, place in oven to bake for 25 minutes counting each 500 gr. turkey Remove and place on platter and serve cut.

“Recipe of baklavou” Ingredients: 2 pounds ground almonds and blanche 1.5 kilo of baklava sheet 0.5 pound of fresh butter 1 cup fine semolina cloves Syrup: 3 pounds of sugar 16 cups water half teaspoon of sour How we do it: First mix the ground almonds with semolina and Butter the pan. After a Grease one leaves at the base and put 4-5 leaves and spread over a handful of ground almonds. Then again we lay a buttered sheet and spread it over the ground almonds. This is done until the almonds to finish and stay 4-5 leaf voutyrothoun a one and these will get over it. Cut the cake into pieces and drill each piece with a nail cloves, drizzle with remaining butter, since we scalding. Bake the baklava for about 1.5 hours in 150 degree oven. Boil all ingredients for syrup, making sure the mixture from becoming too thin nor too thick. Pour the cold with hot sweet syrup.
