23 Food Preparation Knife safety A sharp knife is safer than a dull knife Hold the knife properly Cut away from yourself Do not lift the blade off of the cutting surface When cutting, move the knife in a see-saw motion Cut on a flat surface Cut on a surface that is not too low or too high When carrying a knife in your hand, hold the blade down Pass a knife by the handle Don’t catch a falling knife Don’t put a knife in a tub of soap and water Transport knives in a knife shield or wrap in a kitchen towel

24 Food Preparation Food prep gloves Step 1: clean hands and cut; bandage the cut Step 2: if the cut is on your finger, put on the proper size finger cot Step 3: Put a single use, disposable glove on the hand with the cut. It is very important to use disposable gloves properly.
