Different kinds of vegetable Cauliflower: [noun U, C] a vegetable with green leaves around a large hard white head of flowers: Do you like cauliflower?

broccoli : noun [U] a vegetable with a thick green stem and several dark green or purple flower heads

spinach noun [U] a vegetable with large dark green leaves that are cooked or eaten in salads

cucumber noun C, U] a long vegetable with dark green skin and light green flesh, that is usually eaten raw

lettuce noun [U, C] a plant with large green leaves that are eaten raw, especially in salad.

Squash ( BrE also squashes) a type of vegetable that grows on the ground. Winter squash have hard skin and orange flesh. Summer squash have soft yellow or green skin and white flesh.

Potato noun [C, U] (pl. -oes) a round white vegetable with a brown or red skin that grows underground as the root of a plant also called a potato. Will you peel the potatoes for me?

mushroom (noun) a fungus with a round flat head and short stem. Many mushrooms can be eaten.

Onion noun [C, U] a round vegetable with many layers inside each other and a brown, red or white skin. Onions have a strong smell and flavour.

Pea (n) a small round green seed, eaten as a vegetable. Several peas grow together inside a long thin pod on a climbing plant also called a pea.

bean (n) a seed, or pod containing seeds, of a climbing plant, eaten as a vegetable. There are several types of bean and the plants that they grow on are also called beans.
