Angel Food Cake This recipe will make 2-3 small cakes

O In a medium sized bowl beat 3 egg whites, 3/8 tsp cream of tartar, and a pinch of salt O Beat until you reach the foamy stage O If you get any yolk in the bowl, you will not reach stiff peaks and your cake will be ruined

O Slowly add ¼ c and 2 T of sugar to the bowl O Continue beating until you reach stiff peak stage O Beat in ¼ tsp and 1/8 tsp of vanilla and 1/8 tsp of almond extract

Fold in the flour O Sprinkle ¼ c of cake flour over the egg mixture O Fold in until the flour disappears

Pour mixture into mold O Make sure your molds are labeled! O Pour mixture into 2 molds O Cut through mixture with a knife to break up air bubbles O Bake 25- 30 minutes

Cool your cake O Invert cake to cool it. O Show cake to Mrs. Anderson Eat and Enjoy! O If you make this at home double the recipe.
