BRIDGET CURLEY Apricot Raisin Bars

Ingredients 1 cup of raisins 1 6-ounce package dried apricots, chopped I ½ cups unsweetened apple juice ¼ cup unsweetened apple juice 3 tablespoons corn starch 1 ½ teaspoons grated lemon rind Vegetable oil spray 1 ½ cups flour 1 teaspoon baking powder 1 ½ cups uncooked oatmeal ¾ cup firmly packed brown sugar ¼ cup sugar 2/3 cup acceptable margarine.

Preparation I combined raisins, apricots, and 1 ½ cups of the apple juice in a saucepan. I cooked this for 20 minutes. Then, I combined the rest of the apple juice, cornstarch and the lemon rind in another bowl and poured it into the first bowl. In a different saucepan, I sifted the flour and the baking powder together, and blended the margarine and the oats. I mixed this until it was crumbly, and spread one layer of oats across the bottom of a pan. Then, I added the raisin/apricot/apple juice filling to the center, and added another layer of oats.

Nutritional Analysis Low in calories. Relatively low in carbohydrates. (17g per bar) No cholesterol. 2 out of 3 grams of fat were unsaturated, and one gram was saturated. Raisins contain vitamins such as Riboflavin, Thiamin, Niacin, Vitamins K, C, E, and B6. They also contain minerals such as Iron, Phosphorus, Potassium, Copper, Manganese, Selenium, and Calcium. Apricots contain vitamins A, C, E, K, and B6. They also have Niacin, Folate, Pantothenic Acid, Thiamin, and Riboflavin. They contain minerals such as Calcium, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper, Manganese and Selenium. The oats contain fiber, which will help keep a person full.
