Chocolate Chip, Raisin & Sunflower Cookies

Ingredients: 75g margarine, 75g caster sugar, 40g oats, 1 egg, ½ tsp vanilla essence, 75g raisins, 25g choc chips, 40g sunflower seeds, 50g plain flour

Equipment Oven temperature Gas 4 /180°C

1. Grease a baking tray

2. Cream the margarine & sugar together with a wooden spoon

3. Beat well until light and fluffy

4. Add the vanilla essence to the egg & beat well with a fork.

5. Add ¾ of the egg to the mixture – keep the rest in case you need it later

6. Beat well after adding the egg.

7. Add the sunflower seeds and chocolate chips.

8. Add the raisins and the oats

9. Add the flour

10. Mix well.

11. The ingredients should stick together. If very dry, add a little more egg.

12. Put 10 or 12 tablespoons of mixture on the greased baking tray.

13. Bake for 12 – 15 minutes at Gas 4 / 180°C

14. When cooked they should be golden brown, & firm on the outside. Remember, cookies don’t go crisp until they are cold.
