Step 1: Cut up 3 identical pieces of potato. Step 2: Prepare a 3% salt hot, cold, and room temperature water bath. Step 3: Let potato pieces soak for 30 minutes. Step 4: Lightly dry and record the new mass. Initial mass of potato pieces: 2.7 grams

The molecules were not moving fast enough, and there for could not pass through Denaturation: When proteins lose their tertiary and secondary structures due to trauma or heat. The hot water was too hot and caused to proteins to destabalive. Molecules could not pass through the damaged proteins

Although we got different data than expected, the reasons for those fluctuations is known. In the future, cooler hot water and warmer will be used so that a change in mass will be present. COLD : 3.7 g HOT : 3.7 g ROOM: 3.6 g
