Lipid Functions and Properties Energy storage – Better source of energy than carbs Cushioning Insulation Lipids are not polymers! Why?? Contain C, H, and O but in a DIFFERENT structure than carbohydrates, and a different ratio Mostly hydrophobic

Fatty Acids Saturated fatty acids – All Carbon atoms bonded to the maximum number of hydrogens Unsaturated fatty acids – At least one Carbon to Carbon double bond

Triglycerides Made up of a glycerol molecule and 3 (tri) fatty acids Bonded together, lets go of an H2O molecule Hydrophilic heads, hydrophobic tails – Think soap

Other Types of Lipids Steroids – Cholesterol – Hormones Sex hormones (estrogen, testosterone), cortisone – Anabolic Steroids Waxes – Not water soluble
