There are over 400 different types of cheese around the world.
Total cheese production in the US in 2006 was 9.53 billion pounds with mozzarella and cheddar making up about 2/3 of that.
Different ingredients and processes employed during the making and aging of cheese result in a wide variety of available cheeses, each with its own distinct texture and flavor profile. There are more than 200 varieties of cheese produced in the United States; more than 1,400 varieties are catalogued in the World Cheese Exchange Database.

4. Definition of Cheese
Derived from milk which is obtained by the coagulation of the milk of certain mammals by rennet or similar enzymes and or lactic or some other organic acid

Jalapeno
CoJack

6. Mozzarella White Soft Usually stringy
Examples: string cheese, pizza cheese

7. Monterey Jack White cheese Harder than mozzarella Sharper in taste
When pulled apart you can see the curds inside
Examples: sandwich cheese

8. Aged Cheddar Yellow in color Hard cheese
Can be pulled apart into curds
The longer it is aged the sharper it becomes
Examples: casseroles, salads, hamburgers, sandwiches

9. Colby Yellow in color Softer than cheddar Moist
Milder than most cheddars
Examples: sandwiches and hamburgers

10. Jalapeno White in color with jalapeno pepper flakes
Made using Monterey jack cheese
Sharp and spicy taste
Can see curds when pulled apart
Examples: snack cheese, sandwiches

11. CoJack Yellow & white marbled cheese
Contains Colby & Monterey Jack cheese
CoJack is softer than Cheddar Jack
Comes in blocks or slices
Examples: snack cheese, used on sandwiches, cheese trays
