2 Why Mole Poblano? My interest to this topic is because it is part of my family heritage. It would be nice that I follow my family’s heritage because it’s weird that my family knows how to cook and I don’t. Also because this is a famous dish around the world.

3 History of Mole Poblano According to eHow’s “The History of Mole” “In the 16 th century, the nuns at Puebla’s convent of Santa Rosa discovered that the Archbishop was route for a visit. They scrounged around the kitchen to find food to serve him, but they found little to offer. They prayed until an angel appeared and direct them to combine the ingredients together: unsweetened chocolate, roasted chili peppers, walnuts, stale, breadcrumbs, chicken stock and about 20 more items and they resulted with dark mole sauce.”

4 What ingredients to use? ½ bolillo (French bread or baguette), lightly toasted ½ teaspoons ground cloves ½ teaspoons ground cinnamon ½ teaspoons anise seeds or to taste 2 Dried Pasilla Chile 15 Dried Mulato chilies 8 Dried Ancho Chile a turkey cut in parts 2 springs parsley 3 cloves garlic peeled 1 large onion chopped (about 1 ½ cups) ¾ cup blanched almonds ½ cup seedless raisings4 teaspoons toasted sesame seeds

5 ¼ teaspoons freshly ground black pepper 1 corn tortilla, fried crispy and broken in small pieces 1 chipotle chili 3 large tomatoes, peeled, seeded, and chopped 1 teaspoon sugar or to taste 1 teaspoon salt or to taste 1 ½ squares unsweetened chocolate 1 cup lard

6 My Recipe Mulato Chile Ancho Chile Pasilla Chile Chipotle Peanuts Almonds Platano Macho Water Animal cookies Chocolate (grandma) Sugar Salt Sesame seeds

7 How to cook Mole Poblano? First, you cut the chilies and take off the veins but be sure to use cloves. After, you fried all the ingredients except the Chile.

8 Then, you put the fry ingredients in a big pot so the ingredient cool off. Next, you wash (2 or 3 times) the Chile to take off the dirt it has.

9 After, you mix all the ingredients in a big pot this includes the Chile also. You blend all the ingredients together but if you make mole for a party you take it to a Molino. Put it in a pot to cook it.

10 Now you start to cook it but you add water, salt, sugar, and chocolate. Finally, you let it boil for while. We are Finish;)- Ready to start to eat.
