3 Basic Ingredients 2 Eggs (Room Temperature) 1 C Milk (Room Temperature) 1 C Flour ½ tsp Salt 2T Butter (to grease the tins)

5 Left to right: blender method; whisk by hand (middle front); cream puff method.

6 Popover pans, deeper than muffin pans

7 Leavening liquid ingredients heating to a high temperature and creating steam to push up batter

8 Puffy pancake – uses the same concept as popovers – steam leavening in large pan

9 Hollow, Smooth Center!
