Steam Distillation For two liquids that are immiscible. Since the liquids are not a single mixed phase, each liquid exerts its own vapor pressure independent of the other.

Steam Distillation For two liquids that are immiscible. Since the liquids are not a single mixed phase, each liquid exerts its own vapor pressure independent of the other. The total vapor pressure is the sum of the separate vapor pressures of the parts of the mixture in their pure state. -Glasstone and Lewis
10
Steam Distillation Boiling is when the vapor pressure is equal to the atmospheric pressure. The boiling point of the “mixture” of these immiscible liquids is thus lower than the normal boiling point of either of the components.
11
Steam Distillation This allows for Eugenol to boil at a much lower temperature than its normal boiling point. The vapors can then be collected and recondensed.
