Model plant Bausch Potato, Inc., in Whitehall, Montana, provided potato processing services for this potato product development study

Alaskan Pike variety potatoes processed as FreshFries at Bausch Potato. With proper conditioning temperatures and this particular type of processing, the end product is a golden fry that rates as a one to two on the USDA french fry color chart.
