Pancakes: A step-by-step guide

Step 1 Add 125g plain flour and ½ tsp salt to a bowl
Make a well and crack 2 medium eggs into it Mix with a wooden spoon, incorporating the flour

Step 2 Gradually add 150ml milk as mixture thickens
Stir in 25g melted butter

Step 3 Heat the pan over med-high heat and lightly grease with a little oil Pour batter into middle of pan and tip from side to side to cover the base Cook for 45 seconds then loosen edge with a pallet knife and flip pancake over to cook other side

Step 4 Once golden brown slide out of the pan onto greaseproof paper and repeat and stack until all the batter is used To serve top the pancake with your favourite filling, fold in half, then again to make triangles or simply roll them up
