On Monday in our class we made delicious food from the Caribbean.

We have been finding out about the island of St. Lucia in Geography, that is why we were cooking food from there. This is a map of St. Lucia

Our class was split into three groups and each group cooked something different.

One group cooked a type of cake called Johnny Bread which is eaten in St. Lucia for breakfast.

Here is the recipe for Johnny Bread 1 cup flour ¾ cup cornmeal ¾ teaspoon of salt 1 egg beaten 5 teaspoons baking powder 1/3 cup of sugar 2 tablespoons vegetable oil 1 cup milk 1. Preheat oven to 180º c 2. Mix all the dry ingredients together. 3. Add milk, egg and oil to dry mixture and stir until it is all mixed in. 4. Pour into a tin. 5. Bake for 30 – 40 minutes until slightly brown on top.

Another group made fruit kebabs with different tropical fruit.

The third group made a drink called Cocoa Tea which was invented in St. Lucia!

Here is the recipe for Cocoa Tea. 6 tablespoons cocoa powder 1 teaspoon grated nutmeg 1 teaspoon cinnamon 1 ½ cups milk 6 tablespoons sugar 6 cups water 1. Put the water in a pan and boil, while adding the cocoa. 2. Let it boil for 3 – 4 minutes 3. Add the milk and sugar and stir. 4. Enjoy your Cocoa Tea!

We all had a fantastic time and really enjoyed cooking food from St. Lucia
