Carrot Cake Ingredients: 8 oz whole meal flour 8 oz brown sugar 4 teaspoons baking soda 2 teaspoons cinnamon 1 teaspoon salt ½ cup melted butter or oil 4 eggs ½ cup chopped walnuts 14 ounces (3 cups) finely grated carrot Zest of an orange Method: Mix the dry ingredients together and then add the walnuts and carrots, mixing well. Beat the eggs and then the oil or melted butter and mix well. Pour the mix into two, one pound regular loaf tins. Bake for an hour in a pre-heated oven at 350F/180C. Bake for 25 to 30 minutes or until the tooth pick comes out clean.
