Oil Water A lipid is a nonpolar molecule that does not dissolve in water.

Lipids: composed mostly of carbon and hydrogen.

Lipids have a higher ratio of carbon and hydrogen than carbohydrates, so they store more energy per gram. Fats have more energy per gram than carbohydrates.

Some lipids are composed of fatty acids. A fatty acid is a long unbranched carbon chain—(usually 16 to 18 H-C-H).

FATS & OILS: Triglycerides Fats and oils are composed of 1 glycerol and 3 fatty acids.

Saturated fatty acid: all single bonds C-H Unsaturated fatty acid: contains double bonds

Saturated Fats: animal fats solid at room temperature contributes to heart disease deposits in arteries Limit the amount in your diet

Unsaturated Fats: Plant, vegetable & fish fats liquid at room temperature Better choice in your diet

Phospholipids: 1 phosphate 1 glycerol, 2 fatty acids
