WHY Recipes? Being able to read a recipe is the first step toward successful cooking. A recipe is a plan, or blueprint, to guide you. Recipes tell you what ingredients to use and how to put them together.

1)Will the food appeal to the family or guests as well as you? 2)Do you have all of the ingredients? 3)If not, can you stay within your budget if you have to buy more groceries? 4)Do you have enough time to make the recipe? 5)Do you have the cooking skills needed to make the recipe? Characteristics of a Recipe A GOOD recipe has two parts: 1.A list of ingredients with the amounts used; 2.The directions for making the food product.

Characteristics of a Recipe It should also include the following things: 1. Ingredients listed in order of their use; 2. Exact measurements (amounts) of ingredients listed; 3. Simple, step-by-step directions listed in sequence; 4. Cooking time; 5. Cooking temperature; 6. Kind of cooking equipment to use; 7. Number and size of servings the recipe makes; 8. That the recipe be a tested one.

How to Get Perfect Results 1. Read the entire recipe carefully before doing anything. 2. Know the meaning of cooking abbreviations, methods and terms. 3. Gather all necessary equipment and ingredients. 4. Complete any preparations (lining muffin tins, greasing pan, etc.). 5. Preheat the oven (if necessary). 6. Follow the recipe directions step-by-step. 7. Measure exactly with standard measures. 8. Cook or bake for the directed amount of time. 9. Clean up as you go!!

Activity Time Can you READ a Recipe?? 2 ounces unsweetened chocolate1/2 teaspoon vanilla 2/3 cup butter1/2 cup sifted pastry flour 2 eggs1/2 teaspoon baking powder 1 cup brown sugar 1/8 teaspoon salt (3/4 cup if semi-sweet chocolate is used) 1/2 cup walnuts, coarsely chopped Melt the chocolate and butter together in a double boiler. Beat the eggs; add sugar until light and fluffy. Add chocolate mixture and vanilla. Combine flour, baking powder and salt; sift into the first mixture; stir well to blend; add nuts. Bake in a buttered 8-inch pan 20-30 minutes at 350 o F. The mixture should be soft in the centre but firm around edges. Cool before cutting. Makes 25 squares.
