ITALIAN PASTA: CAVATELLI

Origin Of The Name Cavatelli= kind of pasta Cavare= to hollow; create a cavity inside with fingers

INGREDIENTS 1kg all purpose flour 500gr gluten flour 500gr warm water Tomato sauce Salt Parmisan cheese

TOOLS Bowl Pastry board Rolling pin Plastic wrap Knife Pot

1. Mix the two different kinds of flour 2. Add warm water little by little 3. Mix the ingredients FRESH PASTA DOUGH

Knead the dough until you obtain a smooth and soft ball of pasta BALL OF PASTA DOUGH

LONG AND HOLLOW SHAPE 7. Cover the ball of pasta with plastic wrap and let it stand for 10 minutes 8. Cut the ball of pasta in long stripes 9. Cut each stripes in small piecies

COOK 10. Create a cavity with your fingers 11. Dredge some flour over cavatelli 12. Drop cavatelli into a pot of boiling water
