22 How are enzymes involved in digestion? The enzyme amylase is produced in the salivary glands, the pancreas and the small intestine. This enzyme catalyses the breakdown of starch into sugars in the mouth and small intestine. Protease enzymes are produced by the stomach, the pancreas and the small intestine. These enzymes catalyse the breakdown of proteins into amino acids in the stomach and the small intestine. Lipase enzymes are produced by the pancreas and small intestine. These enzymes catalyse the breakdown of lipids (fats and oils) into fatty acids and glycerol in the small intestine. The liver produces bile, which is stored in the gall bladder before being released into the small intestine. Bile neutralises the acid that was added to food in the stomach. This provides alkaline conditions in which enzymes in the small intestine work most effectively.

25 Using stem cells In 2012 scientists in America were able to re-program embryonic stem cells to form into cartilage cells to produce a replacement human outer ear. The ear needed a blood supply to grow, so they implanted it under the skin of a laboratory mouse. The ear was eventually transplanted onto the head of a 9 year old boy who had lost his ear in a car accident and risked deafness. The boy is now able to hear normally and lead a normal life. Stem cells obtained in this way often result in the destruction of the developing embryo. Embryonic stem cells are the most useful of all stem cell types as they can turn into any type of body cell.
