PAELLA FAIR TRADE RICE

INGREDIENTS 2 cloves garlic 2 cups rice 400g good quality pork Chorizo 1 green pepper 1 red pepper 2 handfuls peas 6 cups meat/vegetable stock Salt and pepper to season Tomate sauce

Step 1 First fry the garlic in olive oil

Step 2 Then cut up the chorizo and remove the skin

Step 3 Add it to the pan with the garlic

Step 4 Cut the meat into small chunks

Step 5 And add it to the frying pan

Step 6 Chop up the peppers…

Step 7 …and add them to the pan too

Step 8 Now it ’s time to add the rice

Step 9 Let it fry in the pan for a while This way it will absorb the flavour of all the other ingredients.

Step 10 Pour in the stock. Approximately three times as much stock as rice, but remember this depends on the rice!

Step 11 Bring it to the boil and it should turn a deep reddish orange colour

Step 12 Now add the chopped tomato according to taste.

Step 13 Add some fresh peas to the pan, but be careful not to overcook them.

Step 14 The rice will produce some foam that you should remove with a ladle

Step 15 Leave to simmer for around 20 minutes

Step 16 Once the liquid has reduced, turn the heat down and cover for a further 20 minutes.

Step 17 When you remove the cover it should look something like this.
