+ Problem statement Heinz Ketchup is made in just a few plants in North America, one of which is in Fremont, Ohio. Ketchup is very stable under storage, but should be sterilized prior to bottling. Your team is to design the sterilization section of the plant, assuming that the design capacity is 100 million kg per year of ketchup. This section includes: The pump that transfers ketchup from the holding tank (degassing) to the heat exchange system, The heat exchange system (likely to be a tube-in-tube exchanger). The sterilized product is bottled immediately. Your solution should include: a design basis table, energy and material balances, equipment specification, utilities, and costs.
