2 I want to write about English cuisine in general, not one dish, not a recipe, but to embrace it’s features and traditions... English cuisine is famous all over the world for its quality and rather conservative range. Despite the fact that it is known as very sophisticated, and very simple cuisine, Britain still can boast a variety of dishes and products. Traditional English breakfast and a Christmas dinner can be considered as the most famous traditional British cuisine. Many chefs and gourmets also note that native English dishes are especially good if they are cooked at home. In that case,they are made, following the original recipes with all the nuances and details.

3 Cuisine of the United Kingdom has a number of regional varieties, such as Scottish, Welsh, Anglo-Indian, Gibraltar and others. All these kinds are different from each other. Many dishes are very popular in their home regions and are called according to the place of origin of the main ingredients. For example, the lamb sauce in Wales, porridge with meat and spices in Scotland, trout in Northern Ireland, beef and pudding in England. Changeable and temperate climate has a great effect on the traditional English cuisine. Te country's history and geography of the island is also important. English cuisine includes a lot of ingredients from different parts of the world such as China, India and North America. This cuisine is notable for the delicious range of dishes that have put together almost all the culinary traditions of the world.

4 Traditional English breakfast starts at 07.08 am. Classical set of products has formed long time ago. It includes fried eggs and bacon, tomatoes, mushrooms and sausages (I have already written about the English breakfast) and golden toast with orange marmalade. Sometimes it contains breakfast cereals and cereal with milk, smoked herring fried in butter on both sides. More rarely eat oatmeal. Usually oatmeal with berries, tasty and good.

5 The tradition of tea drinking, called Five-o-clock Tea - it's a snack between an early breakfast and a late lunch. At this time, such type of baked goods as shortcakes, apple dumplings, saffron buns and countless varieties of biscuits, treacle tart, all kinds of cakes, a variety of sandwiches are served up. 7 Traditional English dishes contain a lot of cheese and bread, meat, poultry, freshwater and saltwater fish. Among the vegetables the British prefer celery, onions, cucumbers, squash, peas, turnips, carrots, tomatoes, broccoli, and of course, potatoes. The last one is a major component of British cuisine, because many national dishes contain it. Among the meat dishes Britons prefer chicken, pheasant, the traditional turkey. Fruits and berries are playing a major role in the preparation of desserts. You can try these products together with the notorious British pastries. Rosemary, mint, spices and seasonings are also often used in the traditional English menu. However, these components are included to the dishes only to emphasize their natural taste and aroma. 8 One of the most traditional dishes is fish and chips, which is usually prepared with salt and vinegar.

9 Another traditional dish is sausages and mashed potatoes with onion and gravy. Nowadays, some Indian spices can be added to these English viands, giving it a new flavor and taste.

10 The traditional cucumber sandwich consists of thin slices of cucumber between two slices of thinly buttered white bread.

11 Cumberland sausages is the type of traditional sausages, which appeared in the County of Cumberland in England. They are usually very long (up to 50 cm) and are sold in the form of flat circular twisted coil. Sometimes they are made shorter, like ordinary British sausage. Cumberland sausage is a delicacy in Cumbria for nearly 500 years. It is not known how Cumberland sausage has got its own form and flavor. To prepare the Cumberland sausage the pork meat is used. It contains from 85% to 98% of meat. Traditionally, it doesn’t include any dye stuff and artificial preservative.

12 Ecless puff – is a small, round cake filled with currants. It is made of puff pastry with a lot of oil, and is named after the English town Ecless, near Manchester.

13 Lancashire stew appeared during intensive industrialization in Lancashire, North West England. It consisted of meat, onions and potatoes, roast left in the oven on low heat in a heavy pot for the whole day. The dish requires minimal effort, to cook it and it is extremely tasty. It is hard to tear away from it. It is sometimes served up at feasts in the North of England, because it's easy to feed a lot of people, and relatively inexpensive.

14 Parma - a variation of chicken with parmesan cheese, presumably, invented in Teesside conurbation in northern England. This dish is appreciated as a restaurant food or as takeaway food.

15 Simnel cake is a fruit cake, similar to a Christmas cake, covered with almond paste, which is prepared for Easter in England. Eleven marzipan balls are put on the top, along the edges.
