2 A Little Bit About Fingerling Potatoes: Small, stubby, finger-shaped potatoes Mildly sweet flavor with a thin and tender skin Wide variety of colors available in the market Good source of vitamin C and vitamin B6 Click on green arrow to go forward or red arrow to backward

3 Step #1 Gather the following items: Fingerling Potatoes Rosemary Olive Oil Kosher Salt and Black Pepper Colander, Cutting Board, Sharp Knife Sheet Pans

4 Step #2 Wash and scrub the potatoes thoroughly.

5 Step #3 Sanitize your work area. Cut any large potatoes in half. Leave smaller potatoes whole.

6 Step #4 Remove the rosemary needles from the stem and finely chop.

7 Step #5 Place potatoes into a bowl and toss with the rosemary, olive oil, salt, and black pepper (see WebSMARTT recipe for amounts).

8 Step #6 Place potatoes onto sheet pans and roast in a 350 degree oven for about 25 minutes. Roast until tender when pierced with a knife/fork and an internal temperature of 165 degrees or higher has been reached.

9 Click on the red arrow to backward Step #7 To Hold: Hold cooked potatoes in warmer until service. Potatoes are a potentially hazardous food and must be held at 140° F or above. To Serve: Serve potatoes on the serving line. Portion = 2-4 potatoes To Store: 1. All leftovers should be thrown away. DO NOT serve again.
