Knife Skills Practice How to Cut a Potato How to Cut a Potato “Large Sticks” become Medium Dice (1/2 inch square) Batonette become Small Dice (1/4 inch square) Julienne become Brunoise (1/8 inch square)

Your Turn - Wash your potato in cool running water. Use a chef’s knife to practice these cuts: Large Sticks > Medium Dice (1/2 inch square) Batonette > Small Dice (1/4 inch square) Julienne > Brunoise (1/8 inch square) PLANKS > STICKS > SQUARES SAVE ALL SCRAPS!!! Combine like cuts after individual assessment.
