Anolini is a stuffed pasta from Piacenza, where it is served in broth during the Christmas holidays. This recipe will allow you to bring the taste of our town and our region into your own home!

For this recipe you need: flour eggs for the dough warm water Salt meat parmesan cheese for the filling breadcrumbs eggs

Let’s make the dough, with flour and eggs mixed and stirred together.

Run the smooth egg dough through the pasta machine to create long, narrow strips. Mix meat, cheese, breadcrumbs and and eggs to make the filling.

Put small balls of filling filling in the middle of on the sheets the strips… filling on the sheets Cover the filling, folding the strip of the doug the sheets of dough…

Cut out the «anolini» with a typical tool, the anolini cutter…

Finally the anolini are ready!

Now let’s cook them, boiled in a good, homemade broth… and just eat them! Delicious!!
