Making Breakfast Muffins Lesson Objective : To demonstrate the way in which a savoury muffin can be made into a suitable breakfast product

Bacon and Cheese Muffins INGREDIENTS 4 slices bacon, fried and chopped ½ onion, chopped 125g plain flour 80g Cheddar cheese, grated 1 ½ tsp baking powder ½ pinch salt ½ teaspoon pepper ½ tsp paprika 1 medium egg 120ml milk 30ml oil Makes 8 Method Preheat the oven to 200 C / Gas 6. fry the bacon until crispy and chop it. In a large bowl, combine the bacon with the next 8 ingredients. In a another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened. Fill greased muffin cups two- thirds full. Bake for 15 to 20 minutes or until a skewer comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers. They can be eaten warm or cold.
