“Torresmos à moda da Beira Alta”

Ingredients: 1 kg of pork larded 1 head of garlic 2 bay leaves 1 litre of red wine black pepper 500 grams of potatoes salt (pork larded) ( black pepper, bay leaves, garlic and salt) (red wine)

How to cook it: Marinade: - The day before, cut the pork larded into pieces and put it in a bowl. Chop the garlic, mix it with the pork and add 2 bay leaves. Pour the red wine until the larded is covered. Lastly, set aside in a refrigerator overnight. (pork, garlic and the bay leaves) (pouring the red wine) (completed marinade)

Cooking: - The next day, put the mixture in the pan in a high temperature and cook it for about 45-50 minutes. After it starts boiling, put it in a low temperature and let the mixture cook until the pork is soft. Then put salt and black pepper. After cooking, leave it and cook the potatoes (with skin) well washed, water and salt. (potatoes and salt) (cooking the potatoes) (cooking the pork larded)

This is a typical pork dish that is mainly eaten in the North of Portugal. It has this Portuguese name that we cannot translate: torresmos. Enjoy! Maria Miguel – Portugal – Comenius Project
