Type of Pathogens Bacteria Found everywhere Live in and on our bodies Some keep us healthy, others cause illness Need six conditions to grow:

Bacteria Conditions needed to grow: FAT TOM Food Acidity (neutral-slightly acidic) Temperature (41 and 135 degrees) Time Oxygen-some need it, some don’t Moisture-needs high moisture

Major bacteria Salmonella Shigella spp. E. coli Listeria Perfringens Clostridum Botulinum Campylobacter Staphylococcus aureus

Viruses Carried by human beings and animals Do not grow in food, are transferred through food Typically occurs by failure to wash hands!!!
