There are two kinds of Acrostic poems Poems where the Opening letter of Each line is Made up of the letters from the Subject word. Type 1:

Type 2: In this kind of Poem, any letter frOm Each line can be a letter from The subject woRd’s own medleY of letters

Writing acrostic poems: Your target subject can be any word you like: Perhaps a name or a job, the lines of the poem then describe that person and his character. Here is an example using a name: JOE Joe often Offers sweets to Each of his friends.

We can write other poems about our dream jobs (non-acrostic)… When I grow up, I want to be a Nurse who works in a hospital or a Pilot who flies a plane or a Farmer who grows crops or a Tree who gives shade to birds.
