Partners Your groups will be assigned based on the working / learning styles you have shown me this semester. No grumbles please.

You Are On the Job! Safety is top priority! No Horseplay! Stay in your assigned area! Stay away from the door. If you walk over to the door, expect a detention. Get your direction sheet for the lab. Store your backpacks, purses, jackets, etc. on the table near the door. You may not go back into these items during the lab, unless I have time to escort you. Your apron must be tied. Wrap the strings around your front for easier untying later. Fire Drill? Stoves off and evacuate!

Sanitation-- Your Grade Depends on it! Secure hair. Bring your own band. Get rid of gum. Your first step is to WASH YOUR HANDS. Dry them with paper towels. Disinfect your counter tops using the spray bottle under your sink. Put it back under immediately. Only touch surfaces that have been recently washed. Don’t touch your hair, face, forearms, etc. Don’t lick your fingers. Don’t handle your clothes, (pull up your pants, etc.) Cough or Sneeze? – walk over to the heater, use a paper towel and immediately rewash your hands. Watch out for cross contamination! Raw meat germs are very very bad! Wash dishes in the basin or sink ½ full of hot soapy water. Rinse and dry completely. Don’t park your derrière or elbows on the counters Only use lined trashcans

Laundry? Aprons are located in the tiny drawers to the left or right of your sink. They need to be used several times before I wash them. If you think that apron needs it now, you must give it to me. Don’t put it in the washer yourself. After your lab, fold and put it back in the correct drawer. You are allowed to bring in your own clean apron if you prefer. Dishcloths and towels are stored in the top drawer beside the washer. Help yourself. All dishcloths and dishtowels do need to be put in the washer at the end of my inspection of your kitchen. No Tossing!!

Respect Use your manners when we eat. Burping is unattractive. Comments – keep positive “This recipe isn’t my favorite. I would add more salsa.” “I wouldn’t feed this to my dog!” Religious practices are respected. If someone chooses to pray – no teasing. Wait until everyone in your group is seated before you eat.

Bling Don’t leave valuables on the sink shelves. Ask Mrs. D to hold them Leave them home on lab day

Waste and Measurements Don’t waste anything. The money spent on soap is money we don’t have to spend on ingredients. The funds have to cover everything. If your group misses the inspection deadline, you cannot earn a 100% If your group has to have someone stay to finish, you cannot earn more than a B. If your group walks out without the green light from Mrs. D, you will earn nothing and have no more labs. Follow the measurements accurately. I do not buy extra ingredients. If you measure wrong, another group may have nothing.

Are you a Responsible Tenant? You need to leave your kitchen cleaner and more organized than how you found it. Wipe down all surfaces Check each label and tell Mrs D if you are missing anything, BEFORE she inspects. Everyone should be present for inspection. Inspection happens 5 minutes BEFORE the bell rings. If every group did this, the kitchens would always be ready to roll!!

Your Grade Did you work safely? Did you work cooperatively? No one sits down, except while your group eats. Would your customers approve of your sanitation? Did you respect the teacher directions or did you get overly defensive if corrected? Did you use your time efficiently? Was your kitchen ready for inspection 5 minutes before the bell and even cleaner than how you found it? Did you try every item prepared (unless you had prior permission to skip it due to food intolerance issue)? Was it obvious that you paid attention to the lab directions given in advance? Lab grades are test grades.

LAB PROCEDURE QUIZ TRUE OR FALSE: 1.ON LAB DAY SIT DOWN IN YOUR CHAIR INSTEAD OF STARTING TO WORK IN THE KITCHEN. 2.IF YOU NEED SALT, LOOK AROUND IN THE TOP CABINET OF THE DEMONSTRATION UNIT. 3.DISH TOWELS ARE FOUND IN THE 3RD DRAWER OF YOUR KITCHEN. 4.AT THE END OF THE LAB, HANG USED DISH CLOTH OVER THE FAUCET. 5.AT THE END OF THE LAB, PUT WORN APRON IN THE WASHER. 6.DRY HANDS WITH A PAPER TOWEL. 7.YOUR FOOD MONEY IS USED TO BUY DISH SOAP AS WELL AS FOOD INGREDIENTS. 8.YOU NEED TO BE CLEANED UP BY THE BELL TO GET A SUPERIOR GRADE. 9.YOU ARE ALLOWED TO SIT ON THE COUNTERS BUT NO FEET. 10.IF YOU TOUCH YOUR FACE WHILE COOKING, WASH YOUR HANDS IMMEDIATELY.
