Carrots A carrot is a root vegetable, usually orange in color.
Carrots grow from a biennial plant which grows a rosette of leaves in the spring and summer while building up the taproot. The taproot is the orange part of the plant that is usually the only part consumed. However the greens can be eaten, as well!

Carrots Not all carrots are orange!
Carrots can be selectively bred to produce different colors.

They impart a sweet flavor when raw, and even sweeter when cooked. Baby carrots are even sweeter than full-grown carrots, but both are equally as healthy. Carrots are generally peeled before consumption to remove the outer layer.
