3 Ingredients: cups half-and-half ½ cup sugar Pinch salt 5 large egg yolks 3 tablespoons cornstarch 4 tablespoons (½ stick) cold unsalted butter, cut into 4 pieces 1½ teaspoons vanilla extract

4 Steps of making pastry This is the first step in making eclairs or cream puffs because the cream needs to chill for at least a couple of hours (preferably overnight) before you use it to fill the pastries.
